Everyone in my house loves this ziti! I make it on the busiest of nights, because it is super simple, easy clean up, and ready in about 30 minutes. Getting the whole family on board with any meal doesn't happen often - especially with something healthier, so that is an added bonus. My daughter even likes to take this one to lunch the next day (another rare treasure), although my husband has been eating a second helping to finish off the dish so she hasn't had the opportunity lately.

I am not gluten-free anymore, but I still love trying new things, especially when they add nutrients to our bodies. These noodles are packed with protein and fiber (a bonus for your gut)... the best gf I've tried. Red lentils are so good for you! I like them more than regular noodles in my tomato based pasta. The cottage cheese offers even more protein, a healthy swap for ricotta.

I am not great about measuring... I often just throw in spices and ingredients when not following a recipe, but I'm adding my best guesses for you. I'm also an efficient (not lazy! 😂) cook, so I minimize dirty dishes when possible.

INGREDIENTS:
1 8oz box of Barilla Red Lentil Penne Pasta (pictured)
2 cans tomato sauce (pictured)
Dried basil, Italian seasoning, and oregano (~ 1/2 tsp of each spice for each can)
Low fat cottage cheese (~ 2 cups)
Shredded Mozzerella (~1 cup)
Parmesan cheese, grated
COOKING INSTRUCTIONS:
1. Preheat oven to 350°F.
2. Cook noodles according to Al Dente instructions. (7min)
3. Open cans. Put spices directly in cans and stir to distribute.
4. Drain pasta when done. Return to pot, but off of heat.
5. Add 1 can of sauce to the pasta. Stir to combine.
6. In a square (9x9) baking dish, add a small layer of pasta (about 1/3 of total) covering the bottom of the pan.
7. Spoon about 1 cup of cottage cheese on top, smearing it around to loosely distribute.
8. Spoon/drizzle about 1/3 of the second pasta can over that.
9. Add another thin layer of pasta and a second layer of cottage cheese. Spoon/drizzle another 1/3 of can over that.
10. Spread the rest of the pasta on top. Drizzle with remaining sauce, if it's not too liquidy.
11. Cover with Mozzarella. Sprinkle parmasean over the top, as well as salt and pepper to taste.
12. Bake on center rack until hot and cheese is melted well. Approx 15-20 minutes.
13. Cool a bit and enjoy!
I was buying my pasta at Walmart for $2 and change. You can check the actual store for pricing, but it is over $4 per box right now online. Amazon is selling in bulk at 10 boxes for much cheaper. Here's my link if you love it and want to make it a pantry staple with me.
